ONE CHICKEN - 5 MEALS

Eating on a budget doesn’t have to be boring!  In this program we will show you how to use one chicken as the basis for five tasty meals.

Each daily recipe uses basic ingredients that you may already have on hand or can easily purchase. No exotic ingredients, special equipment or involved preparation steps are required.

If you are only cooking for one or two people, this demonstration offers a wealth of ideas on ways to prepare meals with both economy and taste in mind.

 

 

DEBONING CHICKEN TO REMOVE ALL MEAT

Debone and remove all meat from a pre-cooked chicken. This should provide between 4  and  5 cups of meat (white and dark). Refrigerate until needed.

 

CHICKEN STOCK FOR SOUPS

 

In a roasting pan add the Chicken Carcass broken into large pieces along with skin and any bones left from carving the meat off the bones.

1 onion cut into large chunks.

2 lg. carrots, peeled and cut into large chunks.

2 large celery stalks cuts into chunks

6 cloves garlic cut into halves.

Drizzle ¼ cup of vegetable oil over the carcass and veggies and roast covered, in a 400-deg. oven for 1-2 hours until veggies are deep brown.

 

Place pan on top of stove, and over medium heat, add 5 cups of hot water to the contents and bring to a high simmer and cook for 1 hour.  Cool and pour through a large sieve.    Stock freezes well.
